The Ultimate Badboy Burger

What You Need
  • 1.5 lbs. ground beef 15-20% fat
  • 1/4 lbs. cheddar cheese sliced
  • 5 slices bacon
  • 1 lettuce
  • 5 burger buns
  • 2 to matoes slice
  • 1 red oinion sliced & separated into rings
  • ketchup
  • mustard
What You Do
The Prep
  1. Very gently divide the beef into 5 pieces.
  2. Roll each piece in your hands until the mixture stays together in a ball.
The Cook
  1. Cook your bacon until crisp, set to one side and wipe the pan clean of bacon fat.
  2. Heat your grill/pan until it is smoking.
  3. Place the ball of meat in the pan and squash it down immediately with a flat metal kitchen utensil (I use the back of my hand).
  4. Using your finger, make a small dimple in the middle. This stops it from swelling in the middle when it is cooked.
  5. Season with salt & pepper. Cook on one side for a couple of minutes or until it is golden brown/charred on one side.
  6. Flip the burger and cook for a similar time of the other side or until it is right for you (I prefer rare to medium).
  7. Add a couple of slices of the cheddar cheese. They should be melted by the time the burger is cooked.
  8. While cooking the second side, slice your bun/s and heat each side in the same pan as the burger.
The Build
  1. Lay some lettuce, tomato and onion on the bottom bun. Place the burger and slice of bacon on top.
  2. Spread some ketchup and/or mustard on the top bun.
  3. Get stuck in!
